Summer is Here


Every time I make Cowboy Salsa someone asks for the recipe. There are many versions out there. This one is from a dear Momma friend who's recipe calls for cumin. It lends a unique and addictive flavor. Guaranteed.


Cowboy Salsa

1 15 oz. can black beans (rinsed)

1 15 oz. can sweet corn (drained)

1 med. jalapeno (seeded and finely chopped)

4 Roma tomatoes (chopped)
1 yellow, orange or red bell pepper (diced)

1 small purple onion (diced)

1 avocado (diced)

1 tsp. cumin

2 Tbs. olive oil

1/4 cup lime or lemon juice

1 tsp. salt
2 cloves minced garlic
1/3 cup cilantro

Mix all ingredients, except avocado, together in large bowl. Add avocado right before serving. Tastes best after ingredients have had time to marinate a few hours but can be served immediately.

Great with tortilla chips and fabulous over grilled chicken, pork or fish.

Mmmm! I've been looking for a good salsa recipe, what with my tomatoes growing and all. I'll have to share some with you when they're ripe. :) We have yellow pear, roma, beefsteak, better boy, and some seedlings which I'm quite unsure of.

sounds a similar to my sisters recipe... yours has more ingredients... i will have to try it.

Yep.... I gonna try your recipe to accompany the Cowboy nachos on the July 4 Hoe Down...was out all night in grocery store's produce sections looking for "Purple Onions?" Is it possible those are the "Red" onions all stores have???

MMMMM...may favorite....reminds me of all night scrap-a-thons!!!! Gonna make it today I think. Maybe some fajitas or nachos to go with it tonight.
